Cut all vegetables into bite-sized pieces (not too small).
Preheat oven to 200°C / 200°F.
Fill the baking dish with your vegetables: Start with the vegetables with the longest cooking time (carrots, beans). Put vegetables that are quickly cooked on top (broccoli, tomato). Do not add the mushrooms yet.
Sprinkle with some olive oil.
Spread the mushrooms on top.
(Do this after the olive oil, otherwise the mushrooms absorb the oil.)
Sprinkle with fresh herbs, such as basil, oregano, finely chopped leaves of fennel and / or dill. These ingredients provide a wonderful scent!
Season with black pepper and a pinch of salt.
Roast the vegetables in the oven for about 60 min.
When the vegetables are cooked, it is ready to serve!
Gently strain the cooking liquid and let everyone serve themselves.

Choose vegetables of different colours, to obtain a colorful dish. (So use different colors of peppers.)
If you're short of time, briefly blanch the vegetables with the longest cooking time (carrots, green beans) in advance.
