Rhubarb Compote (basic rhubarb recipe)
This rhubarb compote is delicious as a side dish. But you can also use it as ingredient for other dishes. For example pies and jam or as pancake filling.

Important
  1. Important: - Use steel or ceramic knife (no aluminium). - Use steel or enamel pan (not aluminium).
Preparation
  1. Cut the leaf material and the bottom, hard and white pieces of stems.
  2. Rinse the stems underneath the tab and cut them into pieces of 2-3 centimeters (With a kitchen blender it is not much trouble to cut them even smaller).
  3. Cook the rhubarb with the sugar and water in a saucepan with lid. Within 10 minutes the rhubarb pieces are soft and will disintegrate into a form a puree.
  4. Taste if the rhubarb is sweet enough (possibly add extra sugar).
  5. Let cool and store in refrigerator.
Recipe Notes

Tip:

  • Add a little¬†blackberry juice, gradine or cassis liqueur for a lovely pink color.
  • For more binding dissolve 1.5 tsp potato starch in water, add it to the compote, stir through and bring to a boil for 1 minute.
