Apple Sauce with Pear
Simple cooking from grandmother's time, could be easily forgotten. Fresh homemade apple sauce tastes so much better! Add some pears and it's even more special. It's a nice fresh side dish for turkey in the oven. For example at Christmas dinner with a pair of red currents on it.

  • 1 kg apples Sweet cultivar ('Elstar')
  • 0,5 kg pears Regular pears (Conference / Doyenne du Comice)
  • 1 lemon Juice only

Instructions
  1. Take a large heavy saucepan. Fill with 2 liters of water and the juice of a lemon ( This is to prevent browning of the apples).
  2. Peal the apples, remove the core, cut them into large pieces and keep them in the lemonwater. After you pealed all the apples, pour some of the lemonwater out, but leave some to prevent burning. Put the lid on the pan and bring to the boil on a medium heat.
  3. In the meantime peal the pears. Remove the core, cut the pears into pieces and add them to the apples.
  4. Boil for about 15-30 miniutes, till the fruit falls apart. Stir regularly. When the fruit at the bottom of the pan is cooked to a compote, then you can put some more heat. If necessary use a potatomasher to make the pieces in the pan smaller.
  5. Adding sugar to homemade apple sauce is not necessary, but of course you can add it.
Recipe Notes

Tip:  Add 1 tsp of cinnamon for a lovely golden brown color and a heavenly smell.

Variation tips

Use quinces or cooking pears instead of regular pears. Quinces have to cook longer, but have deeper taste and color pink by themselves during cooking.

Smooth compote or with 'lumps'?

Do want your compote to be extra smooth? Pass it once or twice through a sieve.

To get your apple sauce lumpy there are different kinds of trics:

  1. Cut the apples into large and small pieces. When the small pieces are cooked. Take the pan from the heat. End the cooking process by putting the pan into cold water and stir from time to time.
  2. After half the cooking time of take out half of the apple /pear sauce take a blender and puree it smooth ( you can use a blender or a hand mixer) and pour it back in with the other half.

  • Apple sauce factories use sour apples and add 7,5% sugar as a sweetener. Making it yourself is tastier and healthier.
  • Lemon juice is very healthy. Not only because of the vitamine C!
  • You can adopt an apple tree from a fruit grower nowadays. In the spring you can come and take a look at the blossom, and in autumn you can harvest your own apples. Fun, educational and sustainable. Perhaps an original (Christmas) present for grandma and granddad, so to can take their grandchilderen on an outing?
